The classic method and the organic agriculture

KIUS is a classic method sparkling wine made from indigenous grapes of Bellone and Nero Buono by organic agriculture methods. To understand the meaning of KIUS, we invented a word that does not exist. Only in this way, we could create a new classic method sparkling wine by borrowing it from the future of agriculture.

THE CLASSIC METHOD

KIUS classic method organic sparkling wine was uncorked for the first time in 2014 as a result of a vision – the magnification of indigenous grape varieties through a modern, brilliant and original design. The discovery of the invisible is what has guided the birth of KIUS classic method organic sparkling wine. In fact, KIUS is the symbol of a community that has interpreted in a new way its past. As such, KIUS classic method organic sparkling wine is the result of the combination between design, territory and environment in its three types, namely: but, extra brut and pas dosé.

LAND

SAN PIETRO ESTATE

KIUS classic method organic sparkling wine is born in the first Park completely dedicated to bubbles and organic farming. In fact, the grapes of KIUS are only grown in the San Pietro estate, a green reserve, rich in water and fertile soils, enjoying a unique microclimate.

VARIETIES

BELLONE & NERO BUONO

Bellone and Nero Buono grape indigenous varieties are the absolute characters of Carpineti estate wines. These two ancient grape varieties can introduce us to a new story, the one of the classic method sparkling wine. Part of Cori history, they spread in the small paths in the vineyards of Carpineti estates, and they take on a new life in the KIUS classic method organic sparkling wine, showing their sensual character.

BELLONE

THE GRAPE OF ROME’S GODDESS

Bellone grape was the wine to honour Bellona goddess, the ancient Roman goddess that symbolises war and Rome, the justice and the free spirits. Bellone grape was already known to ancient Romans, and it was mentioned by Plinius the Younger in his writings. By the time, Bellone indigenous grape has symbolised the white grape traditionally cultivated by the farmers of Cori, and it was commonly named as ‘bread grape’. In fact, the elders of our community often had it together with hand-made bread for its diet qualities. From Bellone grapes, the brut version of KIUS classic method organic sparkling wine is born as a fresh and persistent essence with golden hues.

NERO BUONO

A WINE STORY YET TO BE DISCOVERED

Differently, Nero Buono indigenous grape origins are still uncertain. Nero Buono is a red grape, and it is mainly cultivated in Cori. Through persistent research and experimentation, from Nero Buono grape we obtained KIUS extra brut and pas dosé versions. They feature in a unique manner tradition and innovation blended by elegant and fine bubbles.

YEAST

FORM

Yeast takes time to form the structure and define our classic method organic sparkling wine. We let the yeast do its work uninterrupted, for between thirty and sixty months, to obtain fine, soft, and natural bubbles bringing out the specific flavours of our grapes.

BUBBLES

LIGHT AND NATURAL

The effervescence of KIUS classic method in its brut, extra brut and pas dosé versions discloses a range of sensations, thanks to bubbles which can be fine and soft, or elegant and persistent. The flavour released by the different versions of KIUS classic method sparkling wine is exalted by the organic agriculture methods which structure its quality. Each KIUS classic method organic sparkling wine bottle is like a harvest of light and once it is uncorked, its bubbles come out from a time capsule.

BRUT

KIUS Brut is a classic method sparkling wine made from an ancient white grape called “Bellone”. Its yeast, for at least twenty-four months, shape and define this unique and fascinating sparkling wine.
